In a medium sized bowl add the almond meal, desiccated coconut and protein powder and stir well.
Add honey, coconut oil, lemon zest and lemon juice and stir until mixture comes together.
Roll into balls (aprox 1 tablespoon or 20g) and roll in the extra desiccated coconut.
Put in fridge to firm up a little. Will keep in the fridge for 2-3 weeks.
